The answers to the brain teasers are:

1. Grain is the visible silver halide particles in a film, the more sensitive a film (the faster its speed) the more prominent the grain becomes.  Gain is the terms used to increase the sensitivity of CCD' arrays in digital cameras and is the equivalent of film speed, the higher the gain the more you see the pixels that make up the image.  They are the same thing in the analogue and digital worlds - use them to best effect.
